Busy Canning




The past couple of weeks we have done some canning. We have some wonderful neighbors that gave us two bushels of peaches so we made 31 quarts of peaches and 21 pints of peach jam. The kids wanted to help me skin the peaches (Carson is a kid after my own heart he just wanted to keep ahead of me cutting the peaches up and as soon as I would turn to take some more out of the scalding pot and put them into the water and put more in the pot he would get three or four ahead of me and he was so excited to be faster than I was. I think I remember trying to do the same thing when I was a kid helping with the canning.) and before I knew it the kitchen was so sticky I am surprised we are not still stuck to the kitchen. If you look close in the picutres you can see the peach running down the cupboards and splattered all over the floor. I had to get up early the next morning and mop the floor before I could even feed the kids breakfast. The two inches of cupboard space I have and one big sink sometimes make canning a bit of a challenge but after a couple of really long days we are so thankful for all we have. We are so greatful for the produce from our garden and from generous neighbors. I have canned some tomatos too, have probably done 20 quarts or so of those and they sure look beautiful on the shelves of my food storage.
Check out the cute aprons they are perfect for the kids, my mom made them for Sierra some years ago and they still come in handy often. Carson did pick the blue one!!

I love their aprons. You are a nice mom to let them help with all of that. I think the stickiness would have done me in.
