Winner Winner Chicken Dinner

So I tried a new recipe that I got out of the Kraft foods magazine. I never know what kind of reaction I will get from my kids but this one was a good one. I think Sierra had three or four helpings and the other two kids had at least two helpings each. My kids love broccoli so it was a winner for us. Plus it was so easy I already had some chicken all cooked and you use instant rice and I used frozen broccoli that I just thawed with water before I put it in so it is really like a 20 minute meal from start to finish. It called for turkey so it would be a good recipe to try with leftover turkey from Thanksgiving but I just used chicken.


Cheesy Broccoli Rice & Turkey

Total Time:25 min
Makes:4 servings, 1-1/2 cups each
What You Need
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
2 cups chopped cooked turkey
2 cups broccoli florets
2 cups instant white rice, uncooked
6 oz. VELVEETA Pasteurized Prepared Cheese Product, cut up

Make It
COMBINE broth, turkey and broccoli in large skillet. Bring to boil. Reduce heat to low; cover and simmer 5 min.
ADD rice and VELVEETA; cover. Remove from heat. Let stand 5 min. or until rice is tender and VELVEETA is melted. Stir until well blended.

Substitute
Substitute 4 small boneless skinless chicken breast halves (1 lb.) for the chopped cooked turkey. Heat small amount of oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 5 min. on each side or until cooked through (170°F). Transfer to plate; cover to keep warm. Bring broth and broccoli to boil in large skillet; continue as directed, returning chicken to skillet along with the rice and VELVEETA.
How to Cube VELVEETA
Cut VELVEETA into slices about 1/2 inch thick. Then, cut each slice crosswise in both directions to make cubes.

SARAH!! I am so glad you found me!! I always wonder how you are doing and how Martha is - it will be fun to keep up!! PS I can't believe how BIG your kids are - has it really been that long?? Crazy!
